Potato starch also offers several possible health benefits, including improved colon health and improved insulin sensitivity. It may also help assist weight loss efforts. Some suitable alternatives to potato starch include cornstarch, arrowroot powder, rice flour, and tapioca starch.
Application
The solubility of normal potato starch was low (4.43%), whereas the solubility of CWSS was high (80.01%). Normally, the solubilities of normal starch and CWSS are 4 and 78–93%, respectively [19].
Dosage
Potato starch contains approximately 800 ppm phosphate bound to the starch; this increases the viscosity and gives the solution a slightly anionic character, a low gelatinisation temperature of approximately 60 °C (140 °F),[1] and high swelling power.
